Pickled Cucumbers

 2 medium sized cucumbers
 2 tsp salt
 ½ cup vinegar
 5 tbsp sugar
 2 tsp grated ginger root
 1 tsp sesame seeds

Peel cucumbers, leaving four green strips. Cut in half, lengthwise and scrape out the seeds with a spoon. Thinly slice the halves. Place the slices in a bowl, add salt, and let stand 10 minutes. Drain excess water, pat dry and place in a bowl or container.
Mix vinegar, sugar, ginger, and sesame seeds in a saucepan and bring to a boil on the stove. Pour the mixture over the sliced cucumbers, let cool, cover and refrigerate.
